Viral Cornbread Cowboy Casserole
Viral Cornbread Cowboy Casserole is a hearty, crowd-pleasing comfort dish that layers seasoned ground beef, corn, beans, and melted cheese under a golden cornbread topping. It’s easy to make, filling, and perfect for busy weeknights or family gatherings.
Ingredients: 1 pound ground beef, 1 small onion diced, 2 cloves garlic minced, 1 can (15 ounces) corn drained, 1 can (15 ounces) black beans drained and rinsed, 1 can (10 ounces) diced tomatoes with green chilies, 1 teaspoon chili powder, 1 teaspoon ground cumin, salt and black pepper to taste, 1½ cups shredded cheddar cheese, and 1 box cornbread mix prepared according to package directions.
To prepare the casserole, preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a large skillet over medium heat, cook the ground beef with the diced onion until the beef is browned and the onion is softened. Add the minced garlic and cook for 30 seconds until fragrant. Drain excess grease if needed.
Stir in the corn, black beans, diced tomatoes with green chilies, chili powder, cumin, salt, and black pepper. Simmer for 3–5 minutes until well combined.
Spread the beef mixture evenly into the prepared baking dish. Sprinkle the shredded cheddar cheese over the top.
Pour the prepared cornbread batter evenly over the cheese layer, spreading gently.
Bake for 30–35 minutes, or until the cornbread is golden brown and cooked through. Allow the casserole to rest for 5 minutes before serving.
