Ingredients
2 medium sweet potatoes, sliced into 1/2-inch rounds
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
6 oz brie cheese, sliced into small pieces
1/3 cup cranberry sauce (homemade or store-bought)
1 tsp fresh thyme or rosemary leaves
Optional garnish: chopped pecans or a drizzle of honey
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Arrange sweet potato rounds on the baking sheet and brush both sides lightly with olive oil.
3. Season with salt and pepper.
4. Roast for 20–25 minutes, flipping halfway through, until tender and golden.
5. Remove from oven and top each round with a small piece of brie.
6. Return to the oven for 2–3 minutes, just until the brie softens and begins to melt.
7. Top each round with a small dollop of cranberry sauce.
8. Sprinkle with fresh thyme or rosemary.
9. Finish with chopped pecans or a drizzle of honey if desired.
