Description
This Epic Roasted Tomato & Goat Cheese Flatbread is bursting with bold Mediterranean flavors — caramelized roasted tomatoes, creamy goat cheese, and a drizzle of balsamic glaze on a crisp golden flatbread. A perfect appetizer, light meal, or shareable party favorite!
Ingredients
1 store-bought or homemade flatbread (about 10 inches)
1 cup cherry tomatoes, halved
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1 tsp dried oregano or Italian seasoning
2 oz goat cheese, crumbled
1/4 cup shredded mozzarella cheese
1 tsp balsamic glaze (plus more for serving)
Fresh basil leaves, for garnish
Optional: pinch of red pepper flakes
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Toss cherry tomatoes with olive oil, salt, pepper, and oregano. Spread on the sheet and roast for 15–20 minutes until softened and slightly caramelized.
3. Place the flatbread on a separate baking sheet or pizza stone.
4. Sprinkle with mozzarella cheese and scatter roasted tomatoes evenly on top.
5. Crumble goat cheese over the flatbread and drizzle lightly with balsamic glaze.
6. Bake for 8–10 minutes, until the cheese is melted and edges are golden.
7. Remove from the oven, top with fresh basil and a sprinkle of red pepper flakes if desired.
8. Slice and serve warm with an extra drizzle of balsamic glaze.
