Ingredients

3 ripe but firm pears, halved and cored

1 tbsp olive oil

1 tbsp honey (plus more for drizzling)

1/4 tsp cinnamon (optional)

Pinch of salt

3 oz blue cheese, crumbled

1/4 cup chopped walnuts (toasted)

Fresh thyme or rosemary, for garnish


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Brush pear halves with olive oil and place cut side up on the prepared sheet.

3. Drizzle lightly with honey, sprinkle with a pinch of salt, and dust with cinnamon if using.

4. Roast for 20–25 minutes, until the pears are tender and lightly caramelized.

5. Remove from the oven and immediately top each pear with crumbled blue cheese.

6. Return to the oven for 2–3 minutes, just until the cheese begins to soften.

7. Transfer to a serving platter, sprinkle with toasted walnuts, and drizzle with more honey.
