Ingredients

1 cup cottage cheese

2 large eggs

1/3 cup honey or maple syrup

1/4 cup melted coconut oil

1 tsp vanilla extract

1 cup crushed pineapple (drained)

1/4 cup unsweetened shredded coconut

1 1/2 cups oat flour (or blended rolled oats)

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

Optional: extra coconut or pineapple chunks for topping


Instructions

1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.

2. In a blender, combine cottage cheese, eggs, honey, coconut oil, and vanilla until smooth.

3. In a separate bowl, whisk together oat flour, baking powder, baking soda, and salt.

4. Add the wet mixture to the dry ingredients and stir until combined.

5. Fold in the crushed pineapple and shredded coconut.

6. Divide batter evenly among the muffin cups.

7. Bake for 18–22 minutes, or until golden and a toothpick inserted in the center comes out clean.

8. Cool completely on a wire rack before serving.

Notes

For extra texture, sprinkle shredded coconut on top before baking.
