Ingredients
1 large acorn squash, halved and seeded
2 tbsp olive oil
2 tbsp honey (plus extra for drizzling)
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp cinnamon
2 oz goat cheese, crumbled
1/4 cup chopped pecans (toasted)
1 tbsp fresh thyme or rosemary leaves
Optional: pomegranate seeds for garnish
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Slice acorn squash into 1-inch wedges and place in a large bowl.
3. Toss with olive oil, honey, salt, pepper, and cinnamon until evenly coated.
4. Arrange squash wedges in a single layer on the baking sheet.
5. Roast for 25–30 minutes, flipping halfway, until golden and tender.
6. Transfer to a serving plate and sprinkle with crumbled goat cheese and toasted pecans.
7. Drizzle with extra honey and garnish with fresh thyme or pomegranate seeds.
8. Serve warm and enjoy the perfect balance of creamy, sweet, and savory!
Notes
For a vegan version, swap goat cheese for cashew cream and use maple syrup instead of honey.
Pairs beautifully with roasted chicken, pork, or a quinoa salad.
Leftovers make a delicious topping for grain bowls or salads the next day.
