Hawaiian Pineapple Cake is a moist, tropical-style dessert bursting with sweet pineapple flavor and topped with a rich, creamy frosting. This easy, crowd-pleasing cake is perfect for potlucks, holidays, or anytime you want a simple cake with a sunny island twist.
Ingredients for the cake: 2 cups all-purpose flour, 2 cups granulated sugar, 2 large eggs, 1 teaspoon baking soda, ½ teaspoon salt, 1 teaspoon vanilla extract, and 1 can (20 ounces) crushed pineapple with juice.
Ingredients for the frosting: 8 ounces cream cheese softened, ½ cup unsalted butter softened, 2 cups powdered sugar, and 1 teaspoon vanilla extract.
To prepare the cake, preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
In a large mixing bowl, combine the flour, sugar, baking soda, and salt. Add the eggs, vanilla extract, and crushed pineapple with its juice. Stir until well combined and smooth.
Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.
To make the frosting, beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fluffy.
Spread the frosting evenly over the cooled cake. Slice and serve.
