These Greek Roasted Potatoes with Whipped Feta are crispy, golden, and bursting with Mediterranean flavor. Zesty lemon, garlic, and oregano infuse every bite, perfectly paired with a creamy, tangy whipped feta dip — the ultimate side dish or snack that steals the show!
Ingredients
2 lbs baby potatoes, halved
3 tbsp olive oil
2 garlic cloves, minced
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
Juice and zest of 1 lemon
2 tbsp chopped fresh parsley
Whipped Feta:
1 cup feta cheese (crumbled)
1/3 cup Greek yogurt
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp honey (optional)
Fresh cracked pepper, to taste
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss potatoes with olive oil, garlic, oregano, salt, pepper, and lemon zest.
3. Spread evenly on the prepared baking sheet, cut side down.
4. Roast for 35–40 minutes, flipping halfway, until golden and crispy.
5. Meanwhile, make the whipped feta by blending feta, Greek yogurt, olive oil, lemon juice, and honey (if using) in a food processor until smooth and creamy.
6. Once the potatoes are done, toss them with lemon juice and sprinkle with fresh parsley.
7. Serve immediately with a generous dollop of whipped feta for dipping or spreading.
Notes
Add a sprinkle of chili flakes for a spicy twist.
Try using dill instead of parsley for a different herb note.
