Fruity Pebbles Cheesecake Tacos
Fruity Pebbles Cheesecake Tacos are a fun and colorful dessert made with crispy cereal taco shells filled with a smooth cheesecake filling and topped with more crunchy Fruity Pebbles. They are sweet, creamy, and perfect for parties, kids’ events, or anytime you want a playful no-bake treat.
Ingredients for the taco shells: 3 cups Fruity Pebbles cereal, 3 cups mini marshmallows, and 3 tablespoons unsalted butter.
Ingredients for the cheesecake filling: 8 ounces cream cheese softened, ½ cup powdered sugar, 1 teaspoon vanilla extract, and 1 cup whipped topping.
Optional toppings: additional Fruity Pebbles cereal, white chocolate drizzle, or rainbow sprinkles.
To prepare the taco shells, melt the butter in a large saucepan over low heat. Add the mini marshmallows and stir until completely melted and smooth. Remove from heat and quickly stir in the Fruity Pebbles cereal until fully coated. Spoon the mixture into taco-shaped molds or drape small portions over the back of wooden spoons or a rolling pin to form taco shells. Allow them to cool and set completely.
To make the cheesecake filling, beat the softened cream cheese in a bowl until smooth. Add the powdered sugar and vanilla extract and mix until well combined. Gently fold in the whipped topping until light and creamy.
To assemble the tacos, pipe or spoon the cheesecake filling into the cooled cereal taco shells. Sprinkle with additional Fruity Pebbles or your desired toppings.
Refrigerate for 30 to 60 minutes before serving for best texture. Serve chilled.
