A refreshing twist on the classic Caprese salad! Juicy tomatoes, creamy mozzarella, and crisp cucumber come together with fresh basil and a drizzle of tangy balsamic glaze — perfect for summer lunches, light dinners, or elegant starters.
Ingredients
2 cups cherry tomatoes, halved
1 large cucumber, thinly sliced into half moons
1 cup fresh mozzarella balls (bocconcini), halved
1/4 cup fresh basil leaves, torn
2 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze
Salt and freshly ground black pepper, to taste
Instructions
1. In a large bowl, combine cherry tomatoes, cucumber slices, and mozzarella balls.
2. Gently toss with olive oil, salt, and pepper.
3. Add torn basil leaves and mix gently again.
4. Transfer to a serving dish and drizzle with balsamic glaze.
5. Serve immediately or refrigerate for 15–30 minutes to chill.
Notes
For extra flavor, add a splash of red wine vinegar.
Can be prepped ahead — just add basil and balsamic right before serving.
Perfect as a side for grilled meats or crusty bread.
