4 cups low-sodium chicken broth

1 cup heavy cream or half-and-half

1/2 cup sun-dried tomatoes (drained and chopped)

3 cloves garlic, minced

1 small onion, diced

1 tsp Italian seasoning

1/2 tsp crushed red pepper flakes (optional)

1 tsp salt

1/2 tsp black pepper

2 tbsp all-purpose flour (for thickening)

1/2 cup grated Parmesan cheese

2 cups baby spinach

1 tbsp olive oil

Fresh basil for garnish


Instructions

1. Add chicken breasts, chicken broth, garlic, onion, sun-dried tomatoes, Italian seasoning, red pepper flakes, salt, and pepper to the crockpot.

2. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and fully cooked.

3. Remove chicken, shred it using two forks, and return it to the crockpot.

4. In a small bowl, whisk together heavy cream and flour until smooth, then stir into the soup.

5. Add Parmesan cheese and spinach; stir until spinach wilts and soup thickens slightly.

6. Cook an additional 10–15 minutes on HIGH.

7. Serve warm, garnished with fresh basil and extra Parmesan if desired.
