Description

A vibrant and refreshing Classic Greek Pasta Salad packed with crisp veggies, tangy feta, and zesty dressing — perfect for summer potlucks, picnics, or easy make-ahead lunches.


Ingredients

12 oz rotini pasta (or any short pasta)

1 1/2 cups cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, chopped

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1/2 cup crumbled feta cheese

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

1 garlic clove, minced

Salt and black pepper, to taste

1 tbsp fresh parsley, chopped (optional)


Instructions

1. Cook the pasta according to package directions until al dente. Drain and rinse under cold water to cool.

2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta.

3. In a small bowl or jar, whisk together olive oil, red wine vinegar, oregano, garlic, salt, and pepper.

4. Pour the dressing over the salad and toss gently to coat everything evenly.

5. Chill for at least 30 minutes before serving to let the flavors meld.

6. Garnish with fresh parsley and serve cold.

Notes

Make ahead and refrigerate up to 2 days — it tastes even better as it sits.
