Ingredients
1 lb ground beef
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
3 medium potatoes, diced small
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1 cup shredded cheddar cheese
2 tbsp chopped parsley (for garnish)

Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add potatoes and cook for 10–12 minutes, stirring occasionally, until golden and tender. Remove and set aside.
3. In the same skillet, add ground beef and onion; cook until beef is browned and onion is softened.
4. Drain excess grease if needed.
