Ingredients:
- 2 pounds yellow potatoes, sliced
- 3 medium carrots, sliced
- 1/2 large sweet onion, thinly sliced
- 2 tablespoons olive oil
- 2 teaspoons seasoning salt
- 1 pound lean ground beef
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 slices precooked bacon, chopped
- 4 slices cheddar cheese
instructions:
1. Preheat the oven to 375°F (190°C), preheat the grill, or start the campfire.
2. In a large bowl, combine sliced potatoes, carrots, and onions. Add olive oil and seasoning salt; toss to coat.
3. In another bowl, mix ground beef with salt and pepper. Form into four flat patties.
4. Cut 8 large pieces of foil, about 20 inches long. Lay two pieces per packet in a cross shape. Place a quarter of the vegetable mixture in the center of the cross.
Place a beef patty on top of the vegetables in each packet.
5. Fold the foil sides up to enclose the contents, sealing the edges to form a packet that traps the moisture inside.
6. Cook on the grill over medium heat, not directly over flames, or bake in the oven on a sheet pan for 30-40 minutes, or until the meat reaches 160°F (71°C) and the potatoes are tender.
7. Open the packets carefully, add a slice of cheese and chopped bacon, then reseal and heat for an additional 2-3 minutes until the cheese melts.
Serve hot directly from the foil for easy cleanup.
